Spaghetti and Planet-Friendly Meatballs

Introduction

Ingredients

For the meatballs

1 tbsp oil or butter for frying
400 g Hey Planet Meatballs  
1 medium onion
Parmesan, grated
1 handful fresh basil
Salt and pepper 

For the tomato sauce

1 tbsp oil or butter for frying
1 medium onion
1 garlic clove
2 x 400g canned chopped tomatoes
2 tbsp dried oregano
1 tsp brown sugar
Salt and pepper

To season and serve

400g pasta of your choice 
Parmesan, grated

Method

Put onion, parmesan, basil, meat, salt and pepper into a food processor, and pulse until everything is chopped and well-blended, and the meat has a consistent texture. 

Roll the mince mixture into 12 equal-sized meatballs. Set them aside on a plate.

Heat a pan over medium heat and add 1 tbsp olive oil or butter. Once the pan is hot, add the meatballs. 

Shake the pan regularly to ensure that the meatballs stay round (so they don’t get flat on one side).

Fry until golden and well done with a crispy crust.

Finely chop the onion and garlic. Heat a saucepan over medium heat, add olive oil, and sauté the onions and garlic until cooked through. 

Add the chopped tomatoes, oregano, brown sugar, salt and pepper.

Let the sauce simmer under a lid for 20 minutes. Taste the sauce and season to taste.

When the sauce is nearly finished, cook the pasta following the pack instructions. 

Place the meatballs in the tomato sauce and heat them through in the sauce for about 5 minutes. 

Drain the spaghetti and either stir into the sauce, or serve the sauce on top. Serve with more grated parmesan and fresh basil, if you like.
