Rice dish with mincemeat from Hey Planet and vegetables can be an inspiration to incorporate more vegetables into your dinner! If you prefer other vegetables, you can always replace them with your own favorites.
Recipe for 4 people
Ingredients:
300 g. Hey Planet Mincemeat (available via foody.dk and Magasin Mad&Vin)
300 g. rice
1 onion
2 cloves of garlic
200 g. carrots
200 g. squash
1bunch of spring onions
2 bell peppers
150 g. frozen peas
150 g. corn
2 tbsp. curry powder
6 dl. vegetable broth
Olive oil for frying
Salt and pepper
Method:
Heat oil in a pot over medium heat, then add finely chopped onion and garlic to the pot. Sauté until the onions are soft
Add the minced meat and curry powder to the pot and increase the heat to brown the meat
Cut the carrots, bell peppers, and spring onions into small pieces, and grate the squash coarsely
Once the meat is cooked, add the vegetables to the pot and sauté them together with the meat
Add the rice and vegetable broth to the pot and let the dish simmer over medium heat with the lid on for 15 minutes. Stir occasionally
Add the peas and corn, and let it simmer further until the rice is tender
Season with salt and pepper to taste
