Hey Planet Meatballs with Bulgur and Tzatziki

Summer is fast approaching and that means barbecue evenings and outdoor gatherings!
This recipe will surely be a hit at your next grill event. Treat yourself and your family to Hey Planet’s planetarian meatballs, which can be easily prepared on the grill. As inspiration, we have created our favourite accompaniments, including a fresh bulgur salad and a creamy tzatziki.

 

For 2 people

Ingredients:

Bulgur Salad

75 g. bulgur
100 g. cherry tomatoes
0,5 cucumber
0,5 bunch of parsley
0,5 red onion
1 red bell pepper
Olive oil
Salt and pepper

Tzatziki
400 g. Greek yogurt (2% fat)
2 cucumbers
3 cloves of garlic
Salt and pepper

 

Hey Planet Meatballs

1 packet of Hey Planet meatballs (available via foody.dk and Magasin Mad&Vin)

A dash of cooking oil

Method:

Bulgur Salad
Cook bulgur according to the package instructions. You can rinse it with cold water afterward and let it drain in a sieve.
 
Halve the cherry tomatoes and finely chop the cucumber, parsley, red onion, and red bell pepper.
 
Mix the chopped vegetables with the cooled bulgur.
 
Add some oil to the salad, as desired.
 
Season with salt and pepper
Tzatziki 

Halve the cucumbers lengthwise so you can scrape out the seeds with a spoon.

Grate the cucumbers coarsely using a grater.
 
Place the grated cucumber in a sieve, sprinkle with salt, and let it sit to allow some of the liquid to drain. You can also squeeze out some of the liquid.
 
Press the garlic into the yogurt, then add the grated cucumber. Mix well.
 
Season with salt and pepper.
