Taco soup, a soup composed of the delicious ingredients inside a taco.
This delicious taco soup, also called Tortilla soup, is the perfect combination of chili and tacos.
The taco soup originates from the Mexico City area in Mexico and was originally made with chicken broth. We've made it with Hey Planet Minced Meat and it's so delicious and filling.
For the soup
1 tbsp oil or butter for frying
2-3 garlic cloves
400 g Hey Planet Minced Meat
2 cans chopped tomatoes
1 can black beans
1 tbsp tomato purée
1 bag taco spice mix
200 g shredded cheese
1-2 cups of water
Thaw Hey Planet Minced Meat in the fridge the night before you make the dish.
Finely chop onion, garlic, cilantro and chili.
Heat a pot over medium heat and add 1 tbsp olive oil. Once the pot is hot, add the chopped ingredients. Stir until slightly fried and turn down the heat.
Add the minced meat and fry for approx. 5 minutes
Add chopped tomatoes, black beans, tomato purée, taco spice mix and water.
Stir and let it simmer adding 1-2 cups of water.
Turn up the heat bringing the soup to a light boil for about a minute and add shredded cheese.
Slice avocado and cut tomatoes and cilantro. Add the soup to a bowl and add the toppings to your liking.
