Danish pebernødder with insects

Christmas time is all about the traditions we love. Spending time with our family, giving gifts and eating great food. It is really simple to add insects into your diet even in for the most traditional meals, which is a great way to add vitamins, minerals and complete protein. 

Bug flour is particularly suitable for baking, because it adds a lovely nutty flavour as well as fibre and other nutrients. Pebernuts are a traditional little biscuit made with Christmas spices, and in this case also buffalo worms, and are easy to make. 


  • 125g sugar
  • 1 egg
  • 125g butter 
  • 250g flour
  • 0.75 tsp ground ginger
  • 0.5 tsp ground cinnamon 
  • 0.75 tsp baking powder
  • 0.5 tsp ground white pepper
  • 0.25 tsp salt
  • 1-2 tb.sp. buffalo worm powder


Heat the oven to 200 degrees celcius. Whisk the butter, egg and sugar together until smooth and white. Add the other ingredients and knead the dough until it becomes one smooth mass. Roll it into 4 or 5 sausages with a diameter of 1cm, roll them into little balls and lightly press them flat. Bake for 8-10 minutes until golden.
