Banana, blueberry and buffalo worm pancake

Banana, blueberry and buffalo worm pancakes are a delicious and protein-rich breakfast and a great way to start off your day. They are gluten free and naturally sweet from the bananas and blueberries.


  • 3-4 ripe bananas
  • 3 large eggs
  • 1 tbsp chia seeds
  • 100 grams coconut flour
  • 100 grams oats
  • 1,5 tbsp buffalo worm flour 
  • 70 gram blueberries (fresh or defrosted)
  • 1 tsp cinnamon or cardamom
  • Butter or coconut oil for frying 


Mash the bananas with a fork and whip the eggs in a bowl. Mix together with the other ingredients and let it sit for about 15 minutes while the chia seeds soak up the liquid.  

Fry the pancakes on both sides on a medium-warm pan. 

Serve with additional blueberries and coconut. Add syrup or honey or whatever you like on your delicious and healthy pancakes.
